First come first there is a lot of difference between a balanced diet and a healthy diet. A diet that is full of vegetables, salads, juice, raw food etc will help in proper functioning of the body. It can also help in reducing the cholesterol level of the body which is very harmful for the proper functioning of the heart. A healthy diet will keep you active and reduce the toxin level in the body. Try the methods of juice fasting as it will help in body detoxification.
References :
This is another version of the classic calorie restricted diet. You will lose weight as long as you stay on the plan. However, as soon as you go back to eating normally, you will gain it back. Healthy eating including portion control along with exercise is the key to long term weight loss. You need to change your lifestyle to get rid of habits that cause overeating or poor food choices to be successful at keeping weight off.
References :
You need at least 1500 calories because what your doing right now is a starvation diet and when you go back to eating normally you will gain weight faster because your body will still think its starving and hold onto anything it can and store it as fat. the taco and sandwich are fine just don't eat those constantly. a good diet involves variety and portion control. and a taco and sandwich is more like 800 calories.
References :
Counting calories for two years now

Your plan seems pretty good and congrats for keeping up with it, my only recommendation is to put any type of lifting that targets body parts in the same routing, because you're probably aware you should have 24 hours rest before targeting the same muscle group, but in your case ;

Monday: Cardio + Arms (Biceps and Triceps)
Tuesday: Cardio + Chest

Your working your bicep and triceps as well as forearm just by targeting your chest. such as bench press which targets

Primarily - Chest
Secondary - Triceps, Biceps.

Personally i wouldn't do that but if it works for you then its alright.

You can have a cheat meal once a week, there is a article based on it i read a few months back, im sure you can google it, cheat meal.

Serious result based on your diet and routine is minimum 2 weeks you'll see minor changes such as tighter muscles but in 3 week to a month you'll see noticeable change.

As long as their is a calorie deficit at the end of the day then youre bound to lose weight.
References :
sounds amazing! mind if i steal it? haha
okay well with a well routine like this you should see results hmm perhaps 2 pounds a week.
its possible. but some weeks will be disappointing to only see 1 pounds, but try and make sure its no more then 3lbs at the most. you might hit a plateau, thats fine keep going.
i know when you say you have toast and peanut-butter and a sandwich and all but make sure its not on the same day. like you know maybe have 2 slices of bread a day. but if you have more sometimes it wont hurt.
References :
It sounds like your daily activities and diet are really balanced.
But I'd suggest you try new things every so often.
That way if you suddenly try something new, your body doesn't go into complete shock and reject it.
But keep up the good work, sir.
Have an open mind about this, don't be so intense that it becomes your top priority. Stress sometimes can mess you up. (:
